PB&J Protein Pancakes
Does this even need an explanation? I don't think so. But can we just appreciate the fact that these are 10 g of fat, 21 g of carbs, and 72 GRAMS OF PROTEIN?!? Okay. CoolPB&J Protein PancakesYields: 6-7 medium-sized pancakes
- 3 egg whites
- 2 TBSP plain greek yogurt
- 1 scoop of Peanut Butter Marshmallow whey protein by cellucor
- 1/2 cup peanut flour
- 1/4 tsp baking powder
- 2 TBSP sugar free hazelnut syrup (Optional)
- Frozen Blueberries
Blend all of the ingredients except for the frozen blueberries. Heat a large frying pan to a low heat and coat with a nonstick spray or a little layer of coconut oil. Cook the batter like regular ol' pancakes on one side for 5-6 minutes. Flip, then cook another 2 minutes. These held together very well and flipped easily! Once finished, I microwaved frozen blueberries for 20 seconds and poured them on top of the pancakes, as well as some Walden Farms zero calorie chocolate syrup. Future recommendation would be putting blueberries in the batter after you've blended it but before cooking it. SO YUM.
