Peanut Butter Blondies
I saw @joefearn make some black bean brownies the other day and really wanted to try the recipe, but had no black beans.... So I improvised and came up with this instead! I looooved it and always preferred vanilla things over chocolate anyways :p So yum and I've already gone through two full batches in a week... Whoops.Peanut Butter BlondiesMakes: 12
- 3/4 cup raw old fashioned oats
- 1 cup white northern beans (or chickpeas)
- 9 TBSP liquid egg whites (or 3 egg whites)
- 1/2 cup unsweetened almond milk
- 1/3 banana (40 g)
- 1 and 1/3 scoops pb cookie dough whey protein (or 50 g any whey protein, which is usually 1.5 scoops for most brands)
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 5 stevia packets
Preheat the oven to 350F. Blend all of your ingredients together! Spray a rectangle baking tray with a nonstick spray. Pour your batter in. Bake at 350 F for 25-30 minutes.When a toothpick comes out clean, it's done! Let cool, slice and enjoy!For one blondie (out of 12): 65 calories; 1 g fat, 8 g carbs (2 g fiber), 6 g proteinI also made a version that has a chocolate peanut butter swirl. For the swirl, follow the recipe directions but before placing it in the oven, mix 2 tTBSP peanut flour, 1/2 TBSP unsweetened cocoa powder, 2.5 TBSP unsweetened almond milk, and 1 stevia packet. Pour on top of the batter and swirl it around. THEN bake as directed.
