Peanut Butter Caramel Mugcake
Unf!! I had this postworkout today and it is a KEEPERRRR. I have to make it many more times to come! I know I will. It was sooo soft and delicate. :DDPeanut Butter Caramel MugcakeServes: 1
- 1/3 cup raw old fashioned rolled oats into a flour
- 2 TBSP peanut flour
- 1/2 TBSP coconut flour
- 2 TBSP unsweetened applesauce
- 1 TBSP plain Greek yogurt
- 2 egg whites
- 1/2 tsp baking powder
- 1 stevia packet
- 1/2 tsp caramel extract
Grind the oats into a flour. Then add the remaining ingredients and blend again. Pour into a bowl sprayed with nonstick spray and microwave for 2:00-2:30 minutes. Flip onto a plate n eeaatttt.I topped mine with a coconut protein cream (3 TBSP plain Greek yogurt, 1 TBSP coconut whey protein from truenutrition.com, 1/2 TBSP unsweetened almond milk, and 1 stevia packet), chopped dates, chopped lemon cream pie quest bar, and unsweetened coconut flakes.
