  • 1/4 cup raw old fashioned rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/4 tsp almond extract
  • 1 stevia packet
  • 1 egg white
  • 1/4 cup plain Greek yogurt
  • 1/2 scoop peanut butter marshmallow whey protein (cellucor brand)
  • 1/2 chocolate brownie quest bar (Optional)

In a bowl, mix the oats, almond milk, almond extract, and stevia packet. Microwave for 3:00-3:30 minutes, or until the liquid is nearly cooked off. Then vigorously whisk in the egg white. Microwave another 30 seconds to fully cook the egg white. Place in the freezer for 5-10 minutes to quickly cool. When it’s not extremely hot, swirl in the plain Greek yogurt and peanut butter marshmallow whey protein. Then break apart 1/2 a chocolate brownie quest bar, and swirl it into the oats.I decided that I wanted to eat these cold for breakfast, so I made it the night before and placed it in the fridge overnight. I put it in a nearly empty vanilla espresso almond butter jar (Wild Friends brand) while it sat overnight in the fridge. Two things: the almond butter flavors seep in and the quest bar bits begin to dissolve. SO AMAZING.I also topped mine with a few raw buckwheat groats.
