Mini Peanut Butter Coconut Muffins (vegan, gluten free)

Mini muffs! Mini peanut butter coconut muffins topped with some maaagical cocowhip that I've wanted to find foreverrr. Being able to destroy an entire muffin in one bite feels absolutely powerful to me. I have control issues.

Mini Peanut Butter Coconut Muffins 

Makes: 8-9 muffins

  • 1/2 cup raw oats

  • 2 TBSP peanut powder

  • 2 TBSP coconut flour

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 cup baking stevia

  • 1/2 cup cashew milk (or almond)

  • 1 TBSP melted coconut oil

Grind the oats into a flour. Add it to the remaining ingredients in a bowl. Be sure you add the milk in last, slowly stirring as you pour in order to blend evenly. Pour your batter into 8-9 mini cupcake molds. Bake at 350F for 14-16 minutes. Enjoy!

Recipe makes 9 muffins so 1 muffin is: 47 cals; 2 g fat, 5 g carbs (1 g fiber), 2 g protein.
