Pizza Roll

Oh...my lord. If you're craving pizza, this will fix that FOR SURE. If you're NOT craving pizza, you WILL be before this finishes cooking. The way the flatbread baked, it was crispy on the outside and still moist on the inside; it ended up like a dang hot pocket :DD Yummm.   • 1/2 a P28 Foods flatbread
  • 1/4 cup natural tomato sauce
  • Italian spices
  • garlic powder
  • handful of spinach
  • 6-7 chopped cherry tomatoes
  • 2 oz baked chicken
  • 1 oz mozzarella style almond cheese (from Whole Foods)
  • 3 TBSP lowfat cottage cheese

Preheat the oven to 350 F. Spray a baking sheet with nonstick spray and lay your 1/2 flatbread on it (When you cut it in half, cut it "hamburger" style so it's nearly a square, not "hot dog" style where it's long and thin). Then spread the tomato sauce and italian spices and garlic to taste. Next, fill it with anything you want! I used spinach, cherry tomatoes, chicken, almond cheese, and cottage cheese. I don't eat real cheese, but the almond cheese and cottage cheese melted so perfectly you wouldn't even know the difference. Then roll the flatbread up to where the edges are on the bottom of itself. You'll have one loonnng roll. Bake at 350F for 12 minutes until it crisps a bit and the cheese melts. Then slice it in 4 pieces and devour!!
