Pumpkin Spice Oatmeal (with a peanut butter cream)

Oats for breaskfast, oats for dessert. Oats oats oats. I like that oatmeal life. This was one of my favorites recently!! It came out perfect and was so simple! Give it a shot.IMG_8573Pumpkin Spice Oatmeal (with a peanut butter cream)Serves: 1

  • 1/2 cup raw old fashioned rolled oats
  • 1/2 cup unsweetened almond milk
  • 2 TBSP pumpkin purée
  • 1/4 tsp pumpkin spice
  • 1 stevia packet
  • 2 TBSP peanut flour
  • 1/4 cup plain Greek yogurt
  • 3 TBSP unsweetened almond milk
  • 5-7 vanilla creme stevia drops (or plain stevia)

In a bowl, mix the first five ingredients (oats, almond milk, pumpkin puree, pumpkin spice, and stevia). Microwave for 2 minutes. In a small bowl or cup, mix the last four ingredients (peanut flour, greek yogurt, almond milk, and stevia) with a spoon and then pour on top of the oats. Yeah buddy. I let mine sit in the fridge overnight in order to eat during my commute to work and the cream infused throughout the oats. It. Was. Divine.
