Pumpkin Spice Pancakes (with a walnut cream)
IT'S ALMOST FALL. TIME TO PUMPKIN-IZE EVERYTHING!Pumpkin Spice Pancakes (with a walnut cream)Serves: 1Pancake Batter
- 1/3 cup raw old fashioned rolled oats
- 1/2 scoop vanilla whey protein
- 2 TBSP coconut flour
- 1/2 tsp baking powder
- 1 stevia packet
- 3 egg whites
- 1/4 cup pumpkin purée
- 3/4 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- 1/2 tsp black walnut extract (or more vanilla)
Walnut Cream
- 1 TBSP raw walnut butter
- 3 TBSP plain Greek yogurt
- 2 TBSP unsweetened almond milk
- 1 stevia packet
First grind the oats into a flour. Then add the rest of the ingredients for the pancake batter and blend again. Form 3-4 pancakes in a large pan sprayed with nonstick spray and cook on a medium heat. Cook 3-4 minutes per side. Make the walnut cream by mixing the four ingredients. I also added pumpkin seeds and puffed millet on top of my pancake stack!
