Pumpkin Spice Poptart

I haven't made a poptart in a while until this. Which is a shame; it's like a lost my way O_O Forgot how magical they are. Pumpkin spice to fit with the fall theme!!IMG_7613[1]Pumpkin Spice PoptartServes: 1Poptart Base

  • 2 TBSP raw old fashioned oats
  • 2 TBSP coconut flour
  • 2 TBSP sugar free syrup
  • 2 TBSP unsweetened almond milk
  • 3 TBSP pumpkin purée
  • 1/2 tsp vanilla extract
  • 1/2 tsp maple extract
  • 1/2 tsp pumpkin pie spice
  • 1 stevia packet
  • 1 large la tortilla factory low carb tortilla

Pumpkin Spice Peanut Butter Icing

  • 2 TBSP peanut flour
  • 2 TBSP plain Greek yogurt
  • 1/8 tsp pumpkin pie spice
  • 15 vanilla stevia drops

First, grind your oats into a flour. Then add the remaining poptart base ingredients (except for the tortilla) and mix evenly. Spread this mixture in the center of your tortilla, making a rectangle. Gently fold the tortilla into a poptart shape around the inside filling, then place on a panini press that's been sprayed with nonstick spray. Cook until lightly browned. Remove and let cool.While that's cooling, make the icing by mixing the 4 listed ingredients.
