Pumpkin Waffles (vegan)

My first successful vegan waffles woohooo and they're PUMPKIN waffles. I'm evolving! Or something... I kind of gave up on making vegan waffles for a while because any time I tried...they just got stuck in the waffle maker... These were a little more "moist" than I wanted but it's a good starting point!! I really want to get nice & crisp waffles without just dumping a ton of coconut oil or maple syrup in them. I will keep trying :D

Vegan pumpkin waffles topped with cookie dough crumbles and chocolate peanut butter yayyyy.

Pumpkin Waffles (vegan)

Serves: 1

  • 1/4 cup oats

  • 3 TBSP spelt flour

  • 2 TBSP pumpkin purée

  • 1/4 cup almond milk

  • 2 tsp coconut oil

  • 1/4 tsp cinnamon

  • 1 stevia packet

  • 1/4 tsp baking powder

Grind the oats into a flour. Then add the remaining ingredients. The coconut oil is important! I tried without coconut oil and it didn't hold together. Once mixed, spray a waffle maker with nonstick spray and pour in your batter. Cook! That's it!

I'd love to toy around with the toppings for these! I feel like pumpkin is such a great, bursting flavor that makes magical combinations with other foods. SUCH AS CRANBERRY. What all would you put on these pumpkin waffles?! I'm going to be making a bunchhhh more.
