Red Velvet Cake Pops

For dessert the other night I made healthy red velvet cake pops. I just love cake k? Cool. mm cakey goodness with a "cream cheese" icing around it. Ps got my nails done so that was fun. Learning to relax sometimes and make time for me. It's amazing what it does for your mental health. Do something for you because you deserve to.   • 1/4 cup coconut flour
  • 1/2 scoop red velvet whey protein (cellucor brand)
  • 1/4 cup unsweetened almond milk
  • 1/2 cup liquid egg whites
  • 1 tsp baking powder
  • 1 stevia packet
  • 1/3 cup plain Greek yogurt

Mix all of the ingredients except for the greek yogurt. Pour in a shallow bowl sprayed with nonstick spray. Microwave for 2-3 minutes. Once cooked, mashhhh it all up into crumbs. Add the plain Greek yogurt and mix until moist. Roll into balls.For an icing, mix plain Greek yogurt, stevia, and cream cheese baking emulsion (all star extracts brand). Roll your cake balls in the yogurt mix.Freeze for 1-2 hours until the outside is solid. Except I got hungry and impatient and didn't wait long enough so do as I say not as I do . Pop. Popop.
