Red Velvet Mugcake

Know what feels more powerful than somehow miraculously leaving Target with exactly what you went in for? Being able to devour year entire meal including the cup it's served in nom.

Wut is this tho Kim? Well. Red velvet mugcake layered with a strawberry mousse (topped with a strawberry) and it's served in an edible stevia-sweetened chocolate parfait cup! SOooOo this was sorta kinda extremely delicious. Ima need you to try this out.

Red Velvet Mugcake

Serves: 1

  • 1/2 cup raw old fashioned rolled oats into a flour

  • 2 TBSP CocoCardio - I buy this on iherb.com

  • 1/2 tsp baking powder

  • 3 stevia packets

  • 1/4 cup pumpkin puree

  • 2 TBSP strawberry greek yogurt

  • 3 egg whites

  • 4-5 drops red food coloring (Optional)

First, grind the oats into a flour. Then add the remaining ingredients. Blend again!!

Pour into a bowl or 2 different mugs sprayed with nonstick spray. Microwave for 3 mins (if in a bowl) or 1.5 mins (if in 2 mugs). Cut into 3-4 slices and layer with the mousse!

For the strawberry mousse: mix 1 container of strawberry greek yogurt (6 oz) with 1 scoop (28g) of quest vanilla protein powder.

To make the chocolate cup: wrap a cup with Saran Wrap or foil! Melt 2 oz stevia-sweetened chocolate in the microwave. Coat the foil and freeze upside down not to disturb the chocolate. Once solid, remove the foil. FILL WITH YUM STUFF.
