Red Velvet Pancakes with a Cheesecake Icing

Any time you check out from iherb.com, you can select 1 free sample of something. I got this thing called CocoCardio a while ago but had no clue how I'd use it... ever. It's made from cocoa, beet juice powder, and hibiscus extract. But then I realized I can use it for a Red Velvet taste!! I usually suck at making things taste like red velvet but this was PERFECT.   • 1/3 cup raw old fashioned oats
  • 1.5 TBSP coconut flour
  • 1/2 scoop vanilla whey protein
  • 1 scoop cococardio (7.5g)
  • 1/2 tsp baking powder
  • 1 stevia packet
  • 1/2 tsp vanilla extract
  • 1/4 cup lowfat cottage cheese
  • 2 egg whites
  • 1-2 TBSP unsweetened almond milk (to thin)

Cheesecake Icing

  • 1/4 cup plain Greek yogurt
  • 1 TBSP vanilla whey protein
  • 1/2 TBSP coconut flour
  • 1 tbsp unsweetened almond milk
  • 3/4 tsp vanilla extract
  • 10 stevia drops

First, grind the oats into a flour. Then add the remaining pancake ingredients and blend again until its all mixed up! It should be semi thick. Cook in a pan sprayed with nonstick spray at a medium heat for 5-6 minutes. Flip,then cook another 3-4 more minutes. Mix the icing ingredients together and then layer in between. I also added a drizzle of walden farm's chocolate syrup. Incredible.
