Red Velvet Protein Crepes

Hnggg this was one of the best breakfasts I've had in weeks! Red velvet protein crepes with a "cheesecake" whip. Because red velvet just isn't complete without cheesecake :p. Topped with chocolate brownie coconut butter (Sweet Spreads brand) and raw cacao nibs. These crepes are so perfect and light. And a great recipe for my low carbers out there.   • 1 TBSP oat flour
  • 4 egg whites
  • 1/2 scoop red velvet whey protein (cellucor brand)
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 stevia packet

"Cheesecake" Whip

  • 1/3 cup lowfat cottage cheese
  • 1 TBSP vanilla whey protein
  • 1/2 TBSP coconut flour
  • 1/2 tsp vanilla extract
  • 1 stevia packet

Blend all of your crepe ingredients until even. Spray a large pan with nonstick spray. Pour half of your crepe batter into the pan and cook on a medium heat for 2-3 minutes, flip, and cook another 1-2 minutes. Repeat for the other half of the batter.Make a "cheesecake" whip by using a handblender to blend the lowfat cottage cheese, vanilla whey protein, coconut flour, vanilla extract, and stevia packet until smooth.Spread each crepe with cheesecake whip, roll up, and slice into 8 pieces total. ️
