Southwestern Panini

I've got a wittle bit of a panini problem :) It's just so fun and easy to toast food in a wrap! So versatile and all the flavors meld and become soo flavorful. I've been loving these red kidney beans by Melissa's Produce so I threw them in a panini!!IMG_7248Southwestern PaniniServes: 1

  • 3 oz 99% lean ground turkey
  • 2 TBSP apple cider vinegar
  • ½ TBSP liquid smoke mesquite flavoring
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 TBSP all natural salsa
  • ¼ cup cooked red kidney beans
  • 1 large la tortilla factory low carb tortilla

First spray a large pan with nonstick spray and add in your ground turkey, apple cider vinegar, liquid smoke, onion powder, and garlic powder. Cook on a medium heat until the ground turkey is fully cooked. Once done, turn off the heat and add your salsa and red kidney beans. I used pre-steamed beans by Melissa’s Produce because first of all they taste amazing (they add spices before packing) and second of all… they’re super easy since they’re already cooked :D Anyways. Stir the salsa and beans into the ground turkey for a minute. Then place this entire mixture in the center of your tortilla, forming a rectangle shape. Fold two edges of your tortilla in, then fold the other two in to seal the panini. Place this on a panini press that’s been sprayed with nonstick spray; let it cook for 2-3 minutes, or until it is lightly browned. Slice and serve!I put yellow mustard on mine because. I love mustard. But it’d also be great with more salsa :)
