Strawberry Cheesecake Protein Pancakes

Time to celebrate having a day off withhhh.. pancakes! I made strawberry cheesecake protein pancakes topped with a "cheesecake" whip , a healthy chocolate drizzle, strawberries, and strawberry cheesecake quest bar pieces. So dang good; that "cheesecake" whip is most definitely the winner here.photo2Strawberry Cheesecake Protein PancakesServes: 1

  • 1/2 cup raw old fashioned rolled oats
  • 1/2 scoop strawberry cheesecake whey protein (from truenutrition.com, or vanilla)
  • 1/4 tsp imitation butter extract
  • 1/2 tsp baking powder
  • 1 stevia packet
  • 1/4 cup lowfat cottage cheese
  • 2 egg whites
  • 1/4 Strawberry Cheesecake Quest Bar

First grind the oats into a flour. Then add the whey protein, butter extract, baking powder, stevia, cottage cheese, and egg whites. Blend again. Then break apart the quest bar and swirl it into the batter. Spray a pan with nonstick spray and pour some batter in. Cook over a low/medium heat for 2-3 minutes, flip, and cook another 1-2 minutes. Repeat to make 4-5 pancakes.To make the "cheesecake" whip, use a handblender to blend 1/3 cup lowfat cottage cheese, 1 TBSP vanilla whey protein, 1⁄2 TBSP coconut flour, 1/2 tsp vanilla extract, and 1 stevia packet.For the healthy chocolate drizzle mix 2 tsp unsweetened cocoa powder, 1 TBSP unsweetened almond milk, and 1-2 stevia packets.
