Sweet Chocolate Flatbread

Every now and again, I make socca, which is a type of flatbread made from chickpea flour! I forget half the time that I have the flour though D; Sad. I got mine from whole foods and you can also order it on iherb.com with the discount code GIK407 for $10 off.But anyways, I've only ever made savory types of socca like rosemary, onion & herb, etc. Today as a snack I made a chocolate version! Tasted like a brownie, no lieeee. Maybe one day I'll alter the recipe to make a big batch of healthy brownies but for now, this recipe serves one :) Perfect as a dessert "pizza!" Or you know... if you're like me and want sweet food for half your meals... any time of the day XDIMG_6837Sweet Chocolate FlatbreadServes: 1

  • 1/4 cup garbanzo flour (chickpea flour)
  • 1/2 TBSP unsweetened cocoa powder
  • 1/4 cup + 1 TBSP water
  • 1 tsp coconut oil
  • 15 vanilla creme stevia drops
  • 1 stevia packet

In a small bowl, combine all of the ingredients and mix very well! The flour and cocoa powder tend to clump up, so whisk it well. Let it sit for 5 minutes then whisk again. Once completely mixed, spray a small skillet with a nonstick spray. Pour the mixture in and cook on a medium/low heat. Once the socca is nearly cooked through (you can see bubbles forming), flip and let it finish off quickly on the other side.Top with whatever you want your sweet flatbread to have on top! I spread an apple spice hummus that I made recently on top of mine. Perfecttooo.
