Sweet Lemon Hummus

I bought a brand of hummus a few months ago that had a lemon flavor. It was my favorite. It was a big container. It went moldy. It wasn't my favorite enough, evidently. It's no longer at the store...... WAHHHHH. I thought I'd suck it up and get over it but I seriously can't stop craving the lemon hummus. I decided to make my own! I made an apple spice dessert hummus before and loved the idea of a sweet hummus so I decided to make this lemon hummus sweet in order to be used in both savory meals and sweet ones! It's great on my kabocha squash :)IMG_8328Sweet Lemon HummusYields: 1 and 1/2 cups of hummus (24 tablespoons)

  • 1 cup reduced sodium chickpeas
  • 1/2 cup unsweetened applesauce
  • Juice from 2.5 lemons (about 1/3 cup)
  • 1/2 scoop vanilla whey protein
  • 1/2 TBSP coconut oil (Optional)
  • 25 lemon stevia drops

Blend everything! Store in the fridge. It yields 24 tablespoons of hummus, at 21 calories a tablespoon. Also, it thickens up once you've stored it in the fridge so don't freak out if it seems too thin at first. It'll thicken perfectly :)
