Sweet Plum Tart

This was inspired by a nectarine tart I saw Angela make back in... November of last year, ha. I honestly don't know why it took me so long to come up with a version. But behold! A tart! :D My favorite part was the crust!IMG_8881Sweet Plum TartServes: 1

  • 1/4 cup raw old fashioned oats
  • 1 TBSP almond meal (can substitute with coconut flour)
  • 2 TBSP liquid egg whites
  • 1 small plum (or fruit of choice)
  • 1/4 cup liquid egg whites
  • 2 TBSP plain Greek yogurt
  • 12-15 vanilla cream SweetLeaf stevia drops

Preheat the oven to 350F. Grind the oats into a flour. Mix it with the almond meal and 2 tbsp liquid egg whites. Press it evenly into a greased ramekin and bake at 350F for 10 minutes. When it's done, add in the sliced plum on top of the crust. Mix 1/4 cup liquid egg whites, the greek yogurt, and stevia drops. Pour it over the fruit and crust. Bake another 15 minutes at 350F. Let cool 5 minutes and it will easily pop out if you run a butter knife around the edges.I topped mine with a chocolate cream made from 3 tbsp plain Greek yogurt, 1/2 tbsp unsweetened cocoa, and 10-12 liquid stevia drops. Including my chocolate cream on top, everything is 255 calories.
