Sweet Potato Carrot Burgers

Today I was snackin on some almonds and when I opened it up. To my surpriseeee.. TWO almonds in one! How exciting is that?! It's the little things. Seriously.I was also snackin (as always) on some of my turkey meatballs and thought - "almond butter? that should make sense. almond butter goes with everything." And it did. Go ahead and try it, you won't be let down :)photo (10)              I decided to take another stab at a semi-success/semi-fail experiment I had the other day. Today, it came out MUCH better! I'm gonna be honest, they don't look like much. No visual appeal, but the taste is SPOT ON. Strange but good for sure. And I realized after making it that they're paleo. Bonus points! photo (11)Sweet Potato Carrot BurgersYields: 2 large patties or 3 medium patties

  • 1 small, sweet potato (baked and skin removed)
  • 1 cup shredded carrot
  • 1/3 cup almond meal/flour
  • 1 TBSP egg white (optional)
  • 3/4 tsp curry powder
  • 1/2 tsp rosemary
  • 1/2 tsp cardamom
  • 1/4 tsp chili powder

Mash the baked sweet potato (I baked mine at 375F for 70 minutes), then add the rest of the ingredients. Form into 2-3 patties with your hands (I preferred the 3 medium sized patties). Be prepared to get messy! Place the patties in a pan either sprayed with a nonstick spray or coated with a little olive oil. Cover the pan with a lid and cook on medium heat for 4-5 minutes. Flip and cook another 2-3 minutes. The patties are done when no longer doughy and soft. I didn't really decide how these would be best eaten, I just had them plain because I was too hungry to decide :p I think they'd be great with mustard on some type of bread though! When I attempted them the first time, I had it with plain greek yogurt and almond butter and that was amazing. Get creative and let me know what you try out!
