Turkey Taquitos

I dreampt of this meal all dayyyy.. When I was in middle school and high school my cafeteria had these things called crispitos that a ton of people used to hate but I absolutely looooved. I remember the lunch lady laughing at me one day because I flailed my arms in excitement when I saw it was crispito day at school. Crispitos/taquitos are love :DDDphotoTurkey TaquitosServes: 1

  • 3 oz lean ground turkey
  • 1 tsp minced garlic cloves
  • 1/4 tsp chili powder
  • dash of cayenne pepper
  • 2 TBSP all natural salsa
  • 2 TBSP black beans
  • 1 large low carb tortilla (I use La Tortilla Factory)

Preheat the oven to 400F. Spray a pan with nonstick spray and sautee your turkey, garlic, chili powder, and cayenne pepper. When the turkey is nearly done cooking, stir in the salsa and black beans. Remove from heat. Cut the tortilla into 4 equally sized wedges. Distribute the turkey mixture amongst the 4 pieces. Roll each up, using a toothpick to hold them together. Place the 4 taquitos on a baking sheet sprayed with nonstick spray. Bake at 400F for 15-17 minutes, or until crispy. This will change a bit depending on what kind of tortilla you use.Remove the toothpicks. Serve with plain greek yogurt and avocado. More salsa would also be a great pair!
