Zucchini Apple Salad
Jesse and I go on a picnic every year on the day of our first date. This year, we made this raw zucchini apple salad to have on the side. It was sooo quick and easy; no cooking involved! Just tossing together ingredients. We made this and split it between the two of us, but it was definitely a lot and very filling. It could be served as a side or appetizer for 4 people!Zucchini Apple SaladServes: 2-4
- 2 medium raw zucchini
- 1 apple
- 1/4 cup sunflower kernels
- 1/4 cup raisins
- 1/2 TBSP olive oil
- 1 TBSP red wine vinegar
- salt and pepper to taste
Spiralize the zucchini and apple with a spiralizer. Then toss this with the remaining ingredients. For the salt and pepper, I like to use a seasoning called Ruth Annes Muskego Ave by Penzeys Spices. It’s a blend of salt, pepper, garlic, lemon peel, and onion. Place in the refridgerator for 2-3 hours to chill. Serve cold!
