Blueberry Acai Overnight Oats

I picked up some acai powder 2-3 weeks ago at Bed Bath and Beyond and I haven't really figured out what to do with it... O_O I tried it in some yogurt and couldn't taste much.. But then I tried it in a much larger portion in some oatmeal and DEFinitely tasted it! It's a subtle taste, but it's there! So I decided to throw it in oatmeal again for a nice postworkout meal this morning. On days that I go straight from the gym to class, I bring oats that I've prepped. And days that I'm too lazy to prep oats for the next day result in overnight oats, ha. You literally just throw everything in a jar and BAM meal is prepped for the next day.   • 3/4 cup old fashioned rolled oats
  • 1/3 cup plain Greek yogurt
  • 1/2 TBSP chia seeds
  • 1 TBSP acai powder
  • 1/2 cup unsweetened almond milk
  • 1 packet of stevia (Optional)
  • 1/3 cup blueberries (fresh or frozen)

Are you ready for this extremely complicated recipe? Put everything except for the blueberries in a jar or container and stir together with a spoon. Lightly mix in the blueberries. Kay, done :p SO QUICK. Store the container in the fridge overnight and enjoy it the next morning! The chia seeds expand and make the mixture THICK and delicious. You know I love thick textures. The oats also plump up and just.... yummm... You can eat it cold (I prefer this) or warm it up in the microwave.
