Peach Poppyseed Oatmeal (with a lemon creme sauce)

In order to hit the high amount of carbs needed for my current lean bulk, I basically have to eat complex carbs with every dang meal ahah. It's still soo bizarre to me. No complaints though because that usually means oatmeal 1-2x a day. WOOP. I've been having fun with flavor combos :D This one was one of my favorites lately!!IMG_4353[1]Peach Poppyseed Oatmeal (with a lemon creme sauce)Serves: 1

  • 1 cup frozen peach slices
  • 1/2 cup old fashioned rolled oats
  • 2/3 cup unsweetened almond milk
  • 1 TBSP chia seeds (or poppyseeds)
  • 1 stevia packet (Optional)
  • 2 TBSP plain greek yogurt
  • 10 lemon liquid stevia drops
  • 1/2-1 TBSP unsweetened almond milk
  • 1/2 tsp poppyseeds

In a medium bowl, microwave the peach slices for 2 minutes. Remove 2-3 of the slices and set them to the side in order to top the oatmeal with later. Slice up the peach slices remaining in the bowl into smaller cubes. There should also be liquid that came off, leave that in there! More flavor! Then add the oats, almond milk, chia seeds, and stevia into the bowl. Mix everything together and microwave for 4-4.5 minutes, or until it's reached your desired consistency. I like to cook mine until almost all the liquid has cooked off. Then put the saved peach slices back on top.For the lemon creme sauce, just mix the greek yogurt and lemon stevia together with a little bit of almond milk to thin (I used about 1/2 TBSP). Pour that over the oats, and top the bowl with poppyseeds! So refreshing.
