Chocolate Blackberry Cardamom Stuffed French Toast

  • 2 egg whites
  • 3 TBSP unsweetened almond milk
  • 2 tsp unsweetened cocoa powder
  • 1/2 tsp cardamom
  • 2 stevia packets
  • 2 pieces bread of choice (I use Nature's Own 40 cal/slice bread)

Vanilla Cottage Cheese Stuffing

  • 1/4 cup lowfat cottage cheese
  • 1 tsp vanilla extract
  • 8-10 liquid stevia drops

Backberry Mash

  • 1/3 cup frozen blackberries
  • 4-5 liquid stevia drops

Mix together the egg whites, almond milk, cocoa powder, cardamom, andstevia packets. Soak 2 pieces bread of choice in the egg white mixure for 2-3 minutes per side. Spray a large pan with nonstick spray and place your soaked bread in. Cook on a medium heat for 3-4 minutes per side, or until the egg white are fully cooked.Make your vanilla cottage cheese stuffing by mixing the cottage cheese, vanilla, and stevia. Make your blackberry mash by microwaving the frozen blackberries for 30 seconds and mashing with the stevia. Spread both stuffing mixtures in between your two pieces of french toast. Slice and serve!I also topped my stuffed french toast with a few more blackberries and a peanut butter marshmallow protein drizzle (1/2 scoop pb marshmallow whey protein by cellucor, 2 TBSP unsweetened almond milk, and 5-7 stevia drops).
