Red Velvet Whoopie Pie

This was altered from my Healthy Oreo recipe to make a thick, softer whoopie pie version!! Oh baby yum. So wonderful.IMG_2245Red Velvet Whoopie Pie Makes: 2 whoopie piesPie Batter

  • 2 TBSP chickpea flour
  • 2 TBSP coconut flour
  • 1 TBSP CocoCardio (Madre Labs brand)
  • 1/4 tsp baking powder
  • 3 stevia packets
  • 1 egg white
  • 3 TBSP water

"Cheesecake" Filling

  • 1/4 cup lowfat cottage cheese
  • 1 TBSP vanilla whey protein
  • 1/2 TBSP coconut flour
  • 1/2 tsp vanilla extract
  • 8-10 stevia drops

Mix the chickpea flour, coconut flour, cococardio, baking powder, and stevia. Then add the egg white and water and evenly mix. Form 4 circles on a sprayed baking sheet, not too thin. Try to keep them thicker but smaller in diameter. Don't taste the batter; you will be sad. Raw chickpea flour tastes verrry bad. Bake at 350F for 9-13 minutes; this will depend on how thin or thick you made your pies.  You want firm tops. Remove and let cool for 5 minutes.Make the "cheesecake" filling. Use a handblender to blend the lowfat cottage cheese, vanilla whey protein,  coconut flour,  vanilla extract, and stevia drops. Stuff inside your pies to make two. Eat.
