Chocolate Chip Cookie Dough "Poptart"

Okay so when I first had an idea for a poptart I really wanted to make a cookie dough one. When I was a freshman in college and still unhealthy I literally had those every dang morning. BEST. FLAVOR. Anyways I couldn't exactly figure out how I wanted to do it until yesterday! I was anxious all day to make it for dessert. And it's kind of all I've been thinking about today O_O I took one bite and my knees buckled, seriously. My boyfriend seemed worried because I was literally speechless XD It was nothing short of amazing... I have no words. And if anyone is curious, I added the nutritional information up in my fitness pal and for the entire recipe, including the glaze and drizzle, it's: 325 calories, 8g fat, 50g carbs (22g fiber), and 34g protein. For JUST the poptart base it's: 225 calories, 7g fat, 42g carbs (21g fiber), and 16g protein.IMG_5477Chocolate Chip Cookie Dough "Poptart"Serves: 1Poptart Base

  •  3 TBSP oat flour (old fashioned rolled oats ground up)
  • 1 TBSP coconut flour
  • 1 TBSP unsweetened applesauce
  • 1 TBSP sugar free syrup
  • 2 TBSP water
  • 15 Vanilla Creme SweetLeaf Stevia drops
  • 1/4 tsp butter extract
  • 1/4 Chocolate Brownie Quest Bar
  • 1 La Tortilla Factory Low Carb/High Fiber tortilla (or favorite tortilla)

Chocolate Protein Glaze

  • 2 TBSP plain greek yogurt
  • 1/2 scoop chocolate whey protein
  • 4-5 stevia drops

 Cookie Drizzle

  • 1 TBSP plain greek yogurt
  • 1 TBSP sugar free syrup

  First, make your "cookie dough" by mixing the oat flour, coconut flour, applesauce, sugar free syrup, water, stevia, and butter extract. Then, break up 1/4 of a Chocolate Brownie Quest Bar into small "chocolate chip" pieces and swirl it into the dough. Place the dough in the middle of your tortilla; fold all four sides like a poptart. Spray a panini press or countertop grill (I used a grill) with nonstick spray, then press down the poptart base until it starts to brown. Make the chocolate glaze by mixing the three ingredients together; spread on the poptart. Make the cookie drizzle by mixing the yogurt and sugar free syrup together; drizzle on top!
