Chocolate Protein Pancakes

So I know I've already posted a Fluffy Chocolate Pancake recipe (probably my favorite everrr :D) but those are more "cakey" and bready than your traditional pancake texture. I like that a lot, but sometimes you gotta change it up, right? ;p These are also chocolate. And also use protein powder. Buuuuttt they're more "normal." Your choice!IMG_3078[1]Chocolate Protein PancakesServes: 1

  • 2 TBSP chocolate whey protein
  • 2 TBSP oat flour (old fashioned oats, ground)
  • 2 TBSP coconut flour
  • 1 TBSP unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 2 stevia packets (Optional)
  • 1/2 tsp vanilla extract
  • 3 egg whites
  • 1/4 cup unsweetened almond milk

Blend all of the ingredients in a magic bullet or something similar - you could mix it by hand in a bowl if you want, just make sure your oats are ground! Once blended, cook in a pan sprayed with non-stick spray on a medium heat for 3-4 minutes. Flip, and cook an additional 2-3 minutes. Then top with yumminess! I added melted cherries, NuttZo nut butter, and slivered almonds :)IMG_5481[1]Another version that ended up like tiramisu!: Chocolate protein pancakes layered with a sweet ricotta spread, topped with a cafe cream protein drizzle (nutriforce sports brand) and healthy lemon halotopcreamery ice cream.
