Cinnamon Pear Walnut Pancakes

Soooo you may or may not know that the peanut butter marshmallow whey protein by cellucor is my all time favorite protein powder evvvarrrrr. Well last week I decided to branch out and I got the cinnamon swirl as well as the whipped vanilla flavors by cellucor. Now my new obsession is the cinnamon swirl flavor O_O So. Good. I had a scoop post-workout this morning on the drive home and then made these as well, ha. Never too much cinnamon (well, one time...... :x). I burnt my wrist making these D; so I hope you enjoy the recipe!IMG_3415[1]Cinnamon Pear Walnut PancakesServes: 1

  • 1/2 cup old fashioned rolled oats
  • 1/2 scoop cinnamon swirl whey protein (cellucor)
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 stevia packet (Optional)
  • 1/4 cup lowfat cottage cheese
  • 2 egg whites
  • 1/2 tsp walnut extract
  • 1/3 cup chopped pear
  • 1 TBSP chopped walnuts

First grind the oats to form oat flour. Then mix the oats with the next 4 ingredients (dry ingredients). Add the next three ingredients (wet ingredients) and blend until thick and creamy. Finally, stir the pear and walnuts into the batter with a fork. Cook on a medium/low heat in a pan sprayed with a nonstick spray. After 5-6 minutes, flip, and cook another 4-5 minutes. SHOO-WOP, DONE. Flufffyyyyy!I topped mine with unsweetened coconut shreds, caramelized pear slices, and sugar free syrup. To caramelize the pear slices, I just cook it in a pan with a tbsp of sugar free syrup and dashes of cinnamon until they're soft :)
