Chunky Monkey Oatmeal Parfait

I discovered a glass in my pantry that's the perfect size to construct oatmeal parfaits sooo... I foresee these happening more often haha. ALSO. My grocery store sells browning bananas for $1.49/bag and there's always about 15-16 in a bag O_O so I've been trying to find creative ways to slip all these bananas into my meals. This week. THIS HAPPENED. MAKE IT. It's got a layer of chocolate oatmeal, a peanut butter cream layer, another layer of chocolate oatmeal, and a banana chia seed pudding. Then topped with chocolate better'n peanut butter and roasted pumpkin seeds.IMG_4807[1]Chunky Monkey Oatmeal ParfaitServes: 1First Layer (Oats):

  • 1/2 cup oats
  • 2/3 cup unsweetened chocolate almond milk (or regular flavor)
  • 1/2 TBSP unsweetened cocoa
  • Stevia to taste

Second Layer (Peanut Butter Cream):

  • 1/3 cup plain greek yogurt
  • 1 TBSP peanut flour (or PB2)
  • Stevia to taste

Third Layer (Banana Chia Seed Pudding):

  • 1 TBSP chia seeds
  • 1/2 medium banana
  • 1/3 cup unsweetened almond milk

  The third layer needs to be made at least 3 hours in advance! I like to make my chia pudding the night before so it's ready in the morning. First, melt the banana in the microwave for 45 seconds. Then stir in the chia seeds and almond milk and simply let it sit overnight. The chia seeds will absorb the liquid and plump up overnight! No sweetener is needed because the banana is sweet enough. In the morning (or whenever you're ready for a parfait!), combine the ingredients for the first layer in a medium bowl and microwave for 3-3:30 minutes (or until all of the liquid is cooked off). In a small dish, stir together the 3 ingredients for the second layer. Then just assemble to your liking and top with goodies! Pretty. Delicious. Yes.
