Cinnamon Spice Barbecue Buffalo Meatballs

I always wanted to try buffalo but could never find it... I realized that the farmer's market I recently moved near sells it! I tried it last week and was blown away. Then to make it more amazing, I didn't realize it was really lean and low cal/fat! I had assumed it would be fatty like beef. Noooope. So even though it's $8.50 a pound... I splurged a bit and bought another pound this week. Absolutely worth it! This was delicious.IMG_4258Cinnamon Spice Barbecue Buffalo MeatballsServes: 2

  • 8 oz raw ground buffalo
  • 1 egg white
  • 1 TBSP minced garlic
  • 1/2 tsp no salt barbecue seasoning (frontier brand)
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg

Preheat the oven to 350F. Mix all of the ingredients evenly. Best to use your hands! Form 6 meatballs. Bake at 350F for 35-40 minutes. That's it!I served mine with a hickory apple spice sauce (1 TBSP unsweetened applesauce, 1 TBSP unsweetened apple butter, 1 TBSP plain Greek yogurt, 1 tsp liquid smoke hickory flavor, 8-10 stevia drops, 1/8 tsp barbecue seasoning, and dashes of cloves, nutmeg, and cinnamon)
