"Cookie Dough" Stuffed Roll-Ups
I've been really loving the raw cacao nibs I got recently - I love this healthy chocolate alternative! So I decided to utilize them to make a "cookie dough" to eat for breakfast. Such a great way to start the day!! And roll-ups are always fun :D"Cookie Dough" Stuffed Roll-Ups:Makes: 8, Serves: 1Roll-Up Base
- 1 TBSP raw old fashioned rolled oats
- 4 egg whites
- 1/2 scoop vanilla whey protein
- 1 tsp psyllium husks (Optional)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 stevia packet
"Cookie Dough" Stuffing
- 1/3 cup raw old fashioned rolled oats
- 2 TBSP coconut flour
- 2 TBSP unsweetened applesauce
- 3 TBSP sugar free syrup
- 2 TBSP water
- 1 TBSP raw cacao nibs (Optional)
- 1/2 tsp vanilla extract
- 1/2 tsp butter extract
- 12-15 English toffee stevia drops
- 1 stevia packet
First make the roll-up base. Grind the oats into a flour. Then add the remaining roll-up ingredients and blend again. Spray a large pan with nonstick spray. Pour half of your batter into the pan and cook on a medium heat for 3 minutes, flip, and cook another 1-2 minutes. Repeat for the other half of the batter.To make the "cookie dough" filling, grind the oats into a flour. Then add the remaining ingredients and mix with a utensil. Place half of the mixture in each crepe, roll up, and slice each roll into 4 pieces!I topped mine with a little zero-calorie walden farms chocolate syrup.
