Fluffy Cherry Vanilla Pancakes
Good lord this felt like a dream. A fluffy stack of healthy vanilla pancakes with a cherry cream, chocolate brownie coconut butter (Sweet Spreads brand), and cocoa coconut Square Bars. #dead. So fluffy and also good as a low-carb option. I demand you make this and experience this dream with me. I was out the night before this at the Atlanta moon ride with friends. It was so funnnn. Proceeds went to a charity for The Bert Show, a radio show in Atlanta. That's how we heard of it. And we actually spotted and MET Bert in the crowd of thousands O_O It was exciting and he was super nice :) Anyways, long story short - I was out late. So I slept in late and treated myself to a lazy brunch :) Mmm.Fluffy Cherry Vanilla PancakesServes: 1Pancake Base
- 1/4 cup coconut flour
- 3 egg whites
- 2 TBSP plain Greek yogurt
- 2 TBSP unsweetened almond milk
- 1/2 tsp vanilla extract
- 1/4 tsp baking powder
- 1 stevia packet
Cherry Cream
- 1/2 cup cherries
- 1/4 cup plain Greek yogurt
- Stevia
Evenly mix all of the pancake base ingredients. Make sure there are no lumps in the coconut flour. Once even, spray a large pan with nonstick spray. Spoon your batter onto the pan to make 3 pancakes - don't push them down! They should be like 3 snowballs, very thick and spoonable. Cook on a low heat for 3-5 mins until lightly brown, flip, and cook another 3-4 mins.Microwave the cherries for 30 seconds. You can use fresh or frozen - I use frozen and drain off the water after microwaving. Then mix with the greek yogurt and stevia to taste.
