Ground Turkey and Apple Stuffed Acorn Squash

I saw a post the other day by delicious_nutritious and I just knew I HAD to make my own take on it for myself. It looked soo delicious. And it was. It made for an awesome meal after my workout this morning. There's so many different natural flavors going on and doesn't need any sort of added spices.   • 1/2 small baked acorn squash
  • 1 serving frozen brussel sprouts (5-6)
  • 4 oz 97% lean ground turkey
  • 3 steamed asparagus spears
  • 1/2 apple, chopped
  • 1 TBSP raisins
  • 1 date, chopped

I start by putting my already baked acorn squash in the oven (set to a low broil). This will reheat the squash as well as making it more roasted rather than just softly baked. Then while that's warming, I prepare the stuffing. If you prefer, though, you can just reheat the squash in the microwave. Microwave the frozen brussel sprouts for 90 seconds, then slice in half. Cut the asparagus spears into 3-4 smaller pieces each and sautee them with the brussel sprouts, ground turkey, and 1/2 chopped apple. Once the ground turkey is lightly browned, turn off the heat. Add in the raisins and chopped date and stir to incorporate. This gets them warm and gooey :D but won't actually cook them. Take the acorn squash out of the oven, and stuff it! Heck to the yeahhhh. Any squash that you prefer can be used but acorn squash are the perfect size for stuffing!
