Zucchini Fritters

I can't remember where I got this originally from but maybe 6 or so months ago I saw a recipe for zucchini fritters that I loved that was SO easy. 3 basic ingredients? Winnnnn. But I can't find the original recipe I used so I decided to make some off of what I could remember. They're delicious and also good cold as a quick snack to bring to work or school. Double or triple this recipe if you want to make a ton for the week to have handy! I love them topped with mustarddddd<333photo (48)Zucchini FrittersYields: 5-6 fritters (About 2 servings, however one hungry Kim can devour this)

  • 1 cup raw shredded zucchini
  • 2.5 TBSP ground flax seed
  • 3 egg whites (or 1/2 cup + 1 TBSP liquid egg whites)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • any other preferred spices (I like cayenne!)

Combine all the ingredients in a bowl and stir well. Let sit for about 5 minutes so the zucchini and flax will absorb the egg whites a bit. Then simply take a spoonful of the mixture and place it in a pan sprayed with nonstick spray. Flatten it a bit with the spoon/fork. If there's a little extra egg white in the bowl, evenly distribute it on top of the fritters. Cook on a medium heat for 4-5 minutes, or until lightly browned. Flip, and continue to cook until the eggs are fully cooked. Done :)
