Kiwi-Stuffed Peanut Butter Pancakes

I made this for dinner last night after my workout and boy oh boyyyy was it good. I usually have a traditional savory meal for dinner but I reeeally craved this as I was driving home. Good decision :DDIMG_5204Kiwi-Stuffed Peanut Butter PancakesServes: 1

  • 1/3 cup raw old fashioned rolled oats into a flour
  • 1/2 scoop pb marshmallow whey protein
  • 1.5 TBSP coconut flour
  • 1 TBSP peanut flour
  • 1/2 tsp baking powder
  • 1 stevia packet
  • 3 egg whites
  • 1/2 tsp almond extract
  • 1 kiwi

First grind your oats into a flour. Then add the protein powder, coconut flour, peanut flour, baking powder, stevia, egg whites, and almond extract. Blend again. Use most of the batter to form 3 pancakes in a large pan sprayed with nonstick spray but save a liiiiittle. Start to cook on a medium heat. Gently shove a slice of kiwi into each pancake. You should have some excess kiwi to top the pancakes with. Cover the slices with the remaining batter. After 3-4 minutes of cooking, flip, and cook another 3 minutes. Enjoy!I topped mine with the extra kiwi, baked kabocha pieces, and a healthy chocolate sauce made by mixing 1 TBSP unsweetened cocoa powder, 1.5 TBSP unsweetened almond milk, and 2 stevia packets.
