Strawberry Banana Waffles

By now, Jesse knows that Saturday means pancakes or waffles for breakfast! I love having the time to make them on the weekend. They're fun. This weekend he asked for strawberry banana sooo I made some :) They've got chunks of strawberries in them which makes it nice and fruity and it has a sweet cream icing on top!IMG_4785Strawberry Banana WafflesServes: 1Waffle Base

  • 1/3 cup raw old fashioned oat
  • 2 tbsp coconut flour
  • 1/2 scoop vanilla whey protein
  • 2 egg whites
  • 1/2 tsp baking powder
  • 1/2 banana (60 g)
  • 1 stevia packet
  • 1 TBSP unsweetened almond milk
  • 1/2 tsp banana extract (Optional)
  • 3 chopped strawberries

Sweet Cream Icing

  • 1/4 cup plain Greek yogurt
  • 1 TBSP coconut flour
  • 1/2 tsp vanilla extract
  • 1 stevia packet
  • 1 TBSP unsweetened almond milk.

Grind the oats into a flour. Add the coconut flour, whey protein, egg whites, baking powder, banana, stevia, almond milk, and banana extract. Blend again until evenly mixed. It should be thick! Swirl in 3 chopped strawberries and cook in a sprayed waffle maker. It will also work as pancakes. Make your sweet cream icing by mixing the 5 listed ingredients. Add on top of your waffles as well as some more sliced strawberries. Eat upppp.
