Masala Chai Green Protein Pancakes
Came home from the gym. Wanted pancakes. What else is new? I wanted chai flavor.... and spiced apples... and had extra spinach about to go bad (you can't taste it, so why not?! :D)... and THIS happened. It tasted EXACTLY how I imagined it. Perrrrrrrfect.Masala Chai Green Protein PancakesServes: 1
- 1/3 cup oats
- 1/2 scoop cinnamon swirl whey protein (cellucor brand)
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp cloves
- 1/2 tsp ginger
- giant handful of spinach
- 2 egg whites
- 1/4 cup cottage cheese
- 2 stevia packets
First, blend all of the dry ingredients (everything except the spinach, egg whites, and cottage cheese) in a magic bullet (or some sort of blender). Once the oats are ground up and everything is basically a powder, add the last three ingredients and blend again. Then, cook on medium heat in a pan sprayed with nonstick spray for 3-4 minutes. Flip, and cook another 2-3 minutes.I topped mine with caramelized apples (I cook them in a pan with a splash of sugar free syrup and a dash of cinnamon), almond butter, and chopped pecans! Mmmm.
