Mint Chocolate Chip Protein Pancakes

Nothing wakes me up quicker than fluffy fluffy pancakes in the morning . Mint chocolate chip protein pancakes with a 'cream cheese' icing, healthy chocolate sauce, double chocolate chunk Quest protein bar pieces, and green #sprankspranks. Because #aesthetics.I am LOVING the new mint chocolate chip flavor of cellucor whey protein!! I'on't even like mint chocolate like that (always hated thin mints and York peppermint patties...) but THIS IS SO GOOD. Such a perfect balance of flavor. Has anyone used "cream cheese emulsion" flavoring? I just got it off amazon and used it in this icing; I'm in love.IMG_7797[1]Mint Chocolate Chip Protein PancakesServes: 1

  • 1/4 cup raw old fashioned oats
  • 1/2 scoop mint chocolate chip protein power (cellucor brand)
  • 2 TBSP coconut flour
  • 2 TBSP water
  • 2 TBSP plain greek yogurt
  • 2 egg whites
  • 1/2 tsp baking powder
  • 1 stevia packet

Grind the oats into a flour. Then add the remaining ingredients and blend again. Spray a large pan with nonstick spray and cook over a medium heat for 2-3 minutes per side, making 4 pancakes.To make the cream cheese icing, mix 1/3 cup plain Greek yogurt, 1-2 drops cream cheese emulsion (all star extracts brand), and 1 stevia packet.To make the healthy chocolate sauce, mix 1 TBSP unsweetened cocoa powder, 1-2 stevia packets, and unsweetened almond milk to desired consistency (about 1 TBSP).
