Orange Soy Ginger Salmon
I love salmon. A lot a lot. If it wasn't so expensive, I think I could eat it with every meal of the day. I'm alllll over any salmon sale. It's so dense and full of flavor and I LOVE when it's broiled or pan-cooked to a crisp. Yummmm. After the gym today I made this orange ginger salmon you HAVE to try! This is a 1-serving recipe (as most are, since I cook for myself ;p) but all of the ingredients can just be doubled or more if you'd like to serve your friends or family.Orange Soy Ginger SalmonServes: 1
- 1/3 of an orange
- 1 TBSP bragg's liquid aminos (or low sodium soy sauce)
- 1 TBSP water
- 1 garlic clove, diced
- 1/2 tsp fresh grated ginger (or powdered)
- 8-10 drops liquid stevia (or desired sweetener)
- 4 oz raw salmon filet
Preheat the oven to 375F. Peel the orange and crush/juice slices in a small bowl. Combine the rest of the ingredients (except for the salmon) with the crushed orange. Coat a small baking sheet with a nonstick spray or olive oil. Place the salmon on the sheet and pour 3/4 of the marinade over the top. (If you have time to plan ahead, let the salmon sit in a bag with the marinade for an hour or two to enhance the flavor) Bake the filet at 375F for 12 minutes. Then set the oven to broil, and broil it for 7 minutes. Remove and serve with the leftover 1/4 of the marinade! :D
