Peanut Butter "Poptart"

Soo Kellogg's came out with a new poptart flavor this week. Peanut Butter and they also have Chocolate Peanut Butter. Since I've been on a poptart kick lately, I figured this was the next most logical flavor to attack :p It took a few failed attempts but this recipe came out great :)IMG_5724[1]Peanut Butter "Poptart"Serves: 1

  • 2 TBSP oat flour (old fashioned rolled oats ground up)
  • 2 TBSP peanut flour (or pb2)
  • 1 TBSP almond flour
  • 1 TBSP coconut flour
  • 1/4 tsp vanilla extract
  • 1 stevia packet
  • 1/4 cup unsweetened almond milk
  • 1 La Tortilla Factory Low Carb/High Fiber tortilla (or favorite tortilla)

First, make the inner peanut butter dough by mixing everything together (except for the tortilla :p). Place the dough in the middle of your tortilla; fold all four sides like a poptart. Spray a panini press or countertop grill (I used a grill) with nonstick spray, then press down the poptart base until it starts to brown. Then I topped mine with 1 TBSP of all natural peanut butter!Without the pb on top: 258 cals, 11g fat, 35g carbs (19g fiber, 3g sugar), and 21g protein.
