Raspberry Vanilla Pancakes

MATH PROBLEM: If Kim leaves the gym travelling west at 45 mph, and her pancakes multiply vertically exponentially, how long does it take for her to completely devour the stack of pancakes? Answer: 3.544 seconds. ️Vanilla pancakes topped with a peanut butter protein drizzle, mashed raspberries, and a chopped white chocolate raspberry quest bar. Vanilla Pancakes

Serves: 1

  • 1/4 cup coconut flour

  • 1/4 cup unsweetened almond milk

  • 4 egg whites

  • 1 TBSP plain greek yogurt

  • 1/2 tsp baking powder

  • 1/2 tsp vanilla extract

  • 1 stevia packet

Mix everything until no more lumps! Cook into 6 pancakes on a low heat for 4-5 mins, flip, and cook another 2 mins. Fluffy wuffy.

For the protein cream, I just mix peanut butter protein powder with unsweetened almond milk & a little stevia until it's a good consistency.

For the mashed raspberries, I just microwave raspberries and mash them with a little liquid stevia.
