Red Velvet Pan'Cakes'

I had some leftover cauliflower this week so I decided to use some in my pancake batter! Because of the cauliflower and coconut flour, these are not like normal pancakes. These are veryyyy fluffy and more literally like small cakes. That you cook in a pan. I absolutely love this recipe!!IMG_9932Red Velvet Pan'Cakes'Serves: 1

  • 1/3 cup riced cauliflower (raw cauliflower pulsed in a food processor)
  • 1/2 scoop chocolate whey protein
  • 1/4 cup coconut flour
  • 1 scoop CocoCardio
  • 1/2 tbsp psyllium husk (Optional)
  • 1/2 mashed banana
  • 2 egg whites
  • 1 tbsp unsweetened almond milk
  • 1 tsp vanilla extract
  • 3/4 tsp baking powder
  • 2 stevia packets

Microwave the cauliflower for 30 seconds. Then add the rest of the ingredients and mix evenly with a spoon. Form 4 cakeys in a large pan sprayed with nonstick spray, turn it on a low/medium heat, and cover the pan. This is important you cook on a low heat or else these burn. After 5-6 minutes, flip, cover, and cook another 2-4 minutes.I topped mine with a vanilla protein sauce (1/2 scoop vanilla whey protein, 2.5 tbsp unsweetened almond milk, and 5-7 stevia drops) and a healthy chocolate drizzle (1 tbsp unsweetened cocoa powder, 1 tbsp + 1 tsp unsweetened almond milk, and 2 stevia packets).
