Sriracha Turkey Bacon Cornbread Muffins

I bought cornmeal last week and I've been playing around with making cornbread all week. Whoops my southern is showing ya'll. Cornbread is just so darn comforting. I finally created a good recipe for it, and of course I started to experiment with flavors. These sriracha bacon cornbread muffins were perfectoooo. Any southern would go ballistic over it.  IMG_8870[1]Sriracha Turkey Bacon Cornbread Muffins Makes: 6 muffins

  • 1/2 cup oat flour (ground up raw oats)
  • 2/3 cup cornmeal
  • 2/3 cup unsweetened almond milk
  • 1 egg white
  • 1 TBSP stevia
  • 2 teaspoon sriracha (more if you love spicy)
  • 1 teaspoon baking powder
  • black pepper to taste
  • 4 pieces turkey bacon

Mix all of the ingredients evenly except for the turkey bacon. Cook your turkey bacon, chop, and swirl it into the mixture. Spray a cupcake pan with nonstick spray and pour your batter into 6 cupcake molds. Bake at 350 F for 18-20 minutes.
