Sriracha Turkey Bacon Cornbread Muffins
I bought cornmeal last week and I've been playing around with making cornbread all week. Whoops my southern is showing ya'll. Cornbread is just so darn comforting. I finally created a good recipe for it, and of course I started to experiment with flavors. These sriracha bacon cornbread muffins were perfectoooo. Any southern would go ballistic over it. Sriracha Turkey Bacon Cornbread Muffins Makes: 6 muffins
- 1/2 cup oat flour (ground up raw oats)
- 2/3 cup cornmeal
- 2/3 cup unsweetened almond milk
- 1 egg white
- 1 TBSP stevia
- 2 teaspoon sriracha (more if you love spicy)
- 1 teaspoon baking powder
- black pepper to taste
- 4 pieces turkey bacon
Mix all of the ingredients evenly except for the turkey bacon. Cook your turkey bacon, chop, and swirl it into the mixture. Spray a cupcake pan with nonstick spray and pour your batter into 6 cupcake molds. Bake at 350 F for 18-20 minutes.
