Guysssssssss I made protein toffee!!!! Mama bear bought me IMO vitafiber for Christmas and this stuff is incredible!!!! I have been wanting to try this foreverrrrr but it's pretty pricey and I wasn't sure if it'd be worth it. BUT IT IS. I am having so much fun baking with it and this is the best thing so far omggg. Makeitmakeit make it you should make it get vitafiber and make this it's so good and a healthy version of a winter favorite and 5 ingredients yeah so good make it make it get it k yeah k cool.
Speaking of Christmas gifts, how was your Christmas?! If you don't celebrate, how has the holiday season been for you?! I hope it's full of friends, family, & relaxation :) It always gets so hectic around this time, but hectic is good. I always view being busy as being loved.
One of my favorite things I got - Jesse bought me this 4 foot plush giraffe that stands up!! Another addition for the giraffe room, yusssss. He also got me some really fancy lights so I can make nicer youtube videos for ya'll! A scarf, socks, healthy bars (I'm an addict to trying them all XD), starbucks gift cards, movie theater gift cards, these fancy PERIODIC TABLE LIGHT UP COASTERS, and so much more! Fun times with my mom, too. I got to see the gym she is opening in a week!! Jesse and I spent a lot of Christmas with his huuuuge family. He has 5 siblings and just. So many family members hahaha. Always a shock to me to be around since I'm coming from a single-child family, ha. But always fun!
Sugar Free Protein Toffee
Serves: 4
3 TBSP peanut butter
1/2 cup liquid vitafiber
1/2 oz crushed almonds (2 TBSP)
2.5 oz sugar free chocolate
1 scoop of chocolate quest nutrition protein powder
Mix the peanut butter, vitafiber, and crushed almonds. Spread on a baking sheet and bake at 350 F for 7-8 mins. You want it bubbling!!!
Once baked up, spread evenly on parchment paper. Not too thin not too thick; use your best judgment. Let cool in the fridge for 30 mins.
Then, microwave 2.5 oz chocolate for 1.5 mins, or until just melted. Once just melted, mix in 1 scoop of chocolate protein powder!!! Spread on top of the cooled down toffee base. I also sprinkled more chopped almonds. Then freeze for 2 hours! Once solid, it will easily break/snap apart into snackable pieces! Enjoy!!!
