White Chocolate Peanut Butter Truffles
Midday kitchen fun time baking and playing :D. I'm taking a week off from the gym since my race. I went twice but my energy is so drained and my left hamstring and knee is killing me. I need to take it safe since I previously strained that hamstring... Plus..I've never rested more than 3 days in a row since I first started working out 2.5 years ago... I'm bad about resting and sleeping. Anyways. This rest is good; with the extra time I fill it with baking ha. I have a problem. So many goodies made this week. This was one of the easiest!! White chocolate peanut butter protein trufflessss. These are dangerously poppable, but sooo so good. Creamy and sweet to da maxXxxZ.White Chocolate Peanut Butter TrufflesMakes: 6
- 2 TBSP coconut flour
- 2 TBSP white chocolate cake batter nut butter (Youfreshnaturals brand)
- 1 scoop vanilla whey protein powder
- 3-4 TBSP unsweetened almond milk
- 1 stevia packet
- 1 TBSP peanut flour
- melted white chocolate coconut butter (Sweet Spreads brand)
Mix the coconut flour, white chocolate cake batter nut butter, protein powder, almond milk, and stevia. Start with just 3 TBSP of almond milk and add more if needed (it depends on your protein powder). Mix until thick and even. Place in the fridge for 15 mins to thicken. Roll into 6 balls. Roll the balls in peanut flour that's been sifted onto a plate. Drizzle melted white chocolate coconut butter on top.
